A Favorite Meal Becomes Dessert with this Mickey Pizza Cookie Recipe!

You absolutely knead these a-dough-rable Mickey Pizza Cookies from DisneyFamily in your life! They’re the perfect treats for anyone with a sweet tooth, or perhaps someone you have a ‘crust’ on. Either way, they’re just so cute they’ll steal a “pizza” someone’s heart!

 

Mickey Pizza Cookies

Ingredients:

  • COOKIES:
  • Store-bought sugar cookie dough
  • Mickey cookie cutter
  • Mini marshmallows
  • Scissors
  • Cocoa powder
  • Paintbrush
  • ROYAL ICING (for 30 cookies):
  • 2 Cups confectioners’ sugar
  • 2 Tbsp meringue powder
  • 1/4 Cup warm water
  • 2 Tbsp lemon juice
  • Gel food coloring (red, yellow, green, black)
  • Piping bag

Directions:

1. Roll out store-bought (or homemade) sugar cookie dough to 1/4″ thick and cut out with a Mickey Mouse cookie cutter. If you don’t have one, you can use a large circle cookie cutter for the head, and a small one for the two ears.

2. Roll out thin strands of the leftover cookie dough, and layer around the edge of the cookies to form the crust of the “pizza.” It doesn’t have to be one continuous strand, as you can smooth out any seams with your fingers. 

3. Bake your cookies per your recipe’s instructions, then cool completely before decorating. 

4. To make the “buffalo mozzarella,” cut the mini marshmallows in half, then put them in the oven to grill for a few minutes until they are slightly toasted. Cool completely before handling.

5. Using a small brush, dust some cocoa powder onto the “crust” of the cookies to add a little more depth and texture. 

6. Next, make the royal icing. Mix sifted sugar and meringue powder in a large bowl or stand mixer. Then add warm water and lemon juice (or other flavor of choice), and mix on medium speed for about 5 minutes.

7. Then divide into different bowls and add food coloring to each (red, yellow, green, and black). The icing used for the peppers and olives will be in the current icing consistency. However, for the cheese, pepperoni, and sauce, you will need to gradually add water to thin it out. The final consistency should be quite runny, similar to that of honey.​​ Once desired consistency is reached, add the icing to piping bags and snip a small hole at the bottom.

8. Spread a thin layer of red icing on the base of the cookie as the “sauce” and leave to dry. 

9. Pipe on yellow icing as the “cheese,” then stick on the marshmallow “mozzarella.” Leave to set for 2 hours. 

10. Pipe on the “olives” with the black icing, “pepperoni” with red icing, and “peppers” with green icing.
