The windows were no longer empty. Instead, they featured themed graphics—cryptic, raven-inspired, and intentionally mysterious.

Soon after, a Notice of Commencement appeared, listing The First Raven LLC as the client, with Gideon’s founder Steve Lewis attached to the project. The timing raised eyebrows. The location. The secrecy. And the proximity to one of Disney Springs’ most line-heavy destinations.

Fans began asking the obvious question: was Gideon’s expanding, relocating, or changing in some fundamental way?

Five Years Later, Steve Lewis Finally Revealed the Answer

The reveal came on a meaningful date—the five-year anniversary of Gideon’s Bakehouse at Disney Springs. Rather than announcing a simple expansion, Steve Lewis unveiled something entirely new.

Later in 2026, Six Ravens will open at Disney Springs, occupying the former Art of Shaving location near Gideon’s. The concept centers on savory hand pies called “Coffyns,” an old-school term reimagined through Gideon’s signature storytelling lens.

Unlike Gideon’s cookie-focused menu, Six Ravens will specialize in fluffy yeast-bread hand pies filled with savory creations developed by Gideon’s kitchen team alongside collaborating Central Florida chefs. The menu will also include potatoes, local draft beer, and desserts, blending grab-and-go convenience with elevated local flavors.
