Gideon’s Bakehouse, known for its hefty cookies and long lines at Disney Springs, just shared a vague Instagram post announcing big news this Friday. Given recent events at Disney Springs, speculation is high about what they’ll reveal.
The Evidence Is Literally on Display
The former Art of Shaving location at Disney Springs, near Gideon’s Bakehouse, is undergoing a transformation. Window graphics featuring red artwork with ravens, crowns, and swords went up in December, and a sign invites visitors to “Please Pardon Our Appearance. Something New is Coming Soon.”
The dark, gothic aesthetic aligns with Gideon’s vibe, but the raven imagery is new and doesn’t match their current branding, hinting at something different than just another cookie counter. Disney Springs visitors have been sharing photos of the windows on social media, trying to decipher the meaning behind the designs.
The Paperwork Tells the Real Story
A Notice of Commencement filed with Orange County last month basically confirmed what everyone suspected. The document lists The First Raven LLC as the client for a new tenant build-out at 1600 E. Buena Vista Dr., Suite C-22. That’s the exact address of the former Art of Shaving space.
Public records show that Steve Lewis, the founder of Gideon’s Bakehouse, is behind The First Raven LLC. So, unless he’s launching a completely unrelated business in the middle of expanding his cookie empire, this is absolutely a Gideon’s project. The property owner listed on the permit is Walt Disney World, which is understandable since this is taking place at Disney Springs.
Everything lines up. The only question is what exactly they’re building.
Why Gideon’s Bakehouse Desperately Needs This
Gideon’s at Disney Springs has been overwhelmed since opening. The small bakery, renowned for its nearly half-pound cookies made from scratch, struggles to keep up with the high demand. Their Cookie of the Month program and limited-edition flavors drive traffic but create operational challenges.
On busy days, which are frequent, Gideon’s uses a virtual queue system. Guests wait to be called back, then join a physical line that the bakery claims is only about 15 minutes long, though the wait to get there can take much longer. Many customers describe the experience as “outrageous,” raising concerns about long-term sustainability and quality.
The Speculation Is Running Wild
So what’s coming on Friday? The safe bet is a second Gideon’s Bakehouse location that helps distribute the crowds and increases cookie production capacity. That would solve the immediate problem of too many people trying to cram into one small space.
But those window graphics suggest something more interesting might be happening. The different branding has people theorizing this could be a coffee shop concept. Imagine a spot where you can get actual coffee drinks, pastries, and yes, Gideon’s cookies, but in a slightly different format than the main bakery. Maybe it’s more of a grab-and-go situation for people who don’t want to deal with the full Gideon’s experience.
Others think it could be a sit-down cafe where you can actually enjoy your cookies instead of eating them while walking around Disney Springs. That would be a significant departure from the current model, but it would also tap into a different market.
The Gideon’s Bakehouse Origin Story
For anyone who doesn’t know the backstory, Gideon’s started incredibly small. Steve Lewis launched the bakery in late 2016 at Orlando’s East End Market with one employee and an $800 budget. He was making massive cookies in tiny batches, and people went absolutely nuts for them. Lines regularly exceeded an hour even at that original location.
When Disney Springs came calling and Gideon’s opened in December 2020, right in the middle of the pandemic, it became an instant destination. The combination of quality cookies, creative flavors, and limited availability created the perfect storm for viral success.
What Happens Friday
Whatever Gideon’s announces, it’s going to impact Disney Springs in a major way. This isn’t a minor menu update or a seasonal offering. This is expansion. This is the bakery acknowledging they’ve outgrown their current setup and need to evolve.
Check back Friday for the official announcement. Based on how much buildup they’re creating, this should be good.
